“The good thing about science is that it’s true whether or not you believe in it.”

This is of course not true. Science has been wrong far more time than it has been correct.
And we’re not even sure what we believe to be true today will be scientifically correct tomorrow.
Yes. That’s true. But, scientists make errors and then gain new knowledge and correct themselves. That’s why there are scientific theories. They are not “guesses”. They are observable facts.
For example: It is a FACT that humans descended from primates. So, evolution is a law.
But, evolution is also a theory because we need to gather more fossils and obtain more evidence to figure out just “how” apes became humans.
And, when people often try to claim that evolution is a lie, or not true, or unbelievable, this is why Neil Degrasse Tyson says this about science. Evolution
(science) is TRUE whether or not you believe in it.
He was probably refererring to science and it’s collision with faith.
When a scientific fact, theory, law, or whatever is accepted as true today but proven incorrect tomorrow, we can fix it when we observe that. Science doesn’t curl up and die at the thought of correcting mistakes. However, religious dogma can’t withstand such scrutiny. Creeds must be altered. People schism from disagreement, creating new sects of beliefs while others cling to The Old Ways.
The Scientific Method holds firm. We may get the details wrong from time to time, but that’s not the fault of science. it’s just a tool. How we use it continues to improve with time.
